Vegetarian & Vegan

It has taken me a long long time and many unsuccessful attempts before finally coming up with a marshmallow recipe that works without gelatine, and here are a few of  my flavours here - suitable for vegans, vegetarians and anyone else who isn't into meat product in their sweets. The key turned out to be aquafaba, basically the gunk that you would normally drain down the plughole when opening a tin of chickpeas, is now carefully reserved and treasured! And what amazing stuff it is - the meringue that can be made from it is fantastic!
